One A Cold Winter's Night
There is nothing the warms the heart and the tummy, like my potato cheese soup. This is the real deal of all “comfort foods”.
Accompanying the potato/cheese soup is my corn bread—hot from the oven. Here are the recipes, I hope you like them.
Potato Cheese Soup - Recipe Ring #2
Ingredients:
- ½ cup onion – chopped
- ½ cup celery – chopped
- 1 Tab. Butter or olive oil
- 4 cups cooked potatoes – diced
- 3 ½ cups chicken broth
- 2 cups skim milk
- 1 teaspoon sea salt
- ½ teaspoon pepper
- 1 dash paprika
- 1 ½ cups shredded Monterey Jack or cheddar cheese
- Fresh parsley-chopped
- Croutons
Directions:
Sauté celery and onion in oil or butter until tender. Add potatoes and broth. Cover and simmer about 15 minutes. Remove from heat. Puree soup in blender or food processor. Return to head and add milk and seasonings. Add cheese and stir until cheese melts. Top each bowl with fresh parsley and croutons. (Serves 8)
Corn Bread - Recipe Ring #2
Ingredients:
- 1/1/2 cup stone ground cornmeal
- ½ cup oat bran
- ½ cup whole wheat flour
- 2 teaspoons baking powder
- 2 cups buttermilk
- 2 eggs
- 2 tablespoons olive oil
- 6 Tablespoons honey
- 1 cup cooked corn
- ¼ cup chopped onions
- ½ cup jalapeños chopped (optional)
Directions:
Combine dry ingredients – add buttermilk, eggs, oil and honey and blend until smooth. Stir in corn, onions and jalapeños. Bake in oiled pan at 400 degrees for 30 minutes or until done. Serve hot!
