Old Rooster
Question: ” What to do with an old, tough Rooster?”
Answer: Put him in a huge pot of boiling water. (kill him first) Add salt, pepper, and Bay leaves.
Cook him until he falls apart. ( about six hours). Meanwhile, saute onion, celery, garlic in a small amount of olive oil. Add some dried parsley. Take the meat off the bones of the old rooster. Mix together the chicken broth, the meat from the rooster,В the vegetables, and seasonings.В Simmer for two hours. Add some milk and and simmer for 30 minutes.В Meanwhile, make some whole wheat bisquits.
Break open the biscuits and pour the Rooster mix over them. Put an extra biscuit on the plate for sopping up the gravy. Enjoy!!
