Winter in Minnesota
What to I do when there is deep snow and the wind chill is minus 15 below zero? I cook. Today, it is black bean soup , Jalapeno corn bread, and PECAN pie!!
When I get tired of cooking, I read. I am in the middle of Heidie Baker’s book, ” Compelled by Love”. It is so good and so right. After the cooking and the reading will come some degree of cleaning. Company is coming in this week end. I love to have visitors when the weather is like this. We will talk and eat pie! Bob will make music on his guitar and we will sing.
For a transplanted Texan, I have learned to appreciate winter in Minnesota. Smile.

My Kitchen Table
My kitchen table is a Happy place, holding the new Poinsettia Bob brought home. Can’t wait until all the leaves are in the table and it is filled with family, friends, and food. We celebrate the birth of the Lord Jesus Christ in our house and in our hearts. Y’all come!

Turkey Soup
Turkey, onions, celery,wild rice, and a few mushrooms are simmering in the red cooking p0t. The Christmas tree lights up the living room and it is snowing outside. It smells good in here, turkey soup and fresh pine.

Cutting the Christmas Tree
Sometimes ” you need a little help from your friends”. (thank you Pastor Sam, Suganthi, Immanuel and Irene). We had help picking out, cutting down, and carrying our tree to load it on the van. It is big, bushy and beautiful. Now for the “decking of the halls”. The whole house will smell like fresh fine needles.
I remember another time and another place when my boys cut down Christmas trees. Memories are strong this year! Smile.

sprout garden
The kitchen counter is my “sprout garden”. Today, I had lentil, broccoli, clover, and radish sprouts on my lunch salad. Yesterday, I had alfalfa sprouts on my toasted cheese sandwich. I will be sprouting all types of seeds during the winter months. They will bump up the nutrition levels and taste great! My sprouting seeds are all organic and do NOT CONTAIN GMO seed.
Besides all that, it is fun to grow green things in winter in Minnesota.

Healthy Holidays
The key to Healthy Holiday dinners is to substitute. Really yummy Cinnamon rolls can be make with organic whole wheat flour ( no white flour), maple syrup, (no sugar), cinnamon and chopped walnuts. Today, I am baking several batches of these to have over Thanksgiving and Christmas. I store them in the freezer. More healthy substitutions include honey (no sugar) to sweeten my pumpkin pies.Â
It is very possible to have a happy and healthy food menu with a little planning. For example, how about popcorn and cider rather than chips and cola for that crunchy snack? This works for me!
